  1. Cheesecake is a sweet dessert consisting of one or more layers.
  2. The main layer is the thickest one.
  3. It consists of a mixture of soft, fresh cheese (typically cream cheese or ricotta), eggs, and sugar.

  5. This one consists of a crust or base made from crushed cookies (or digestive biscuits), graham crackers, pastry, or sometimes sponge cake.
  6. In general, people prefer cheesecake to be unbaked.
  7. It may be baked though.
  8. Cheesecake is usually sweetened with sugar.
  9. It may be flavored in many different ways.
  10. Some of the most popular flavors all over the world are vanilla, spices, lemon, chocolate, pumpkin.

  12. Additional flavors and visual appeal may be added by topping the finished pie with fruit, whipped cream, nuts, cookies, fruit sauce, chocolate syrup, or other toppings.
  13. Its origin is ancient greek, as there was a form of cheesecake which was preferred back then.
  14. The earliest attested mention of a cheesecake is by the Greek physician Aegimus (5th century BCE), who wrote a book on the art of making cheesecakes.
  15. They were served to athletes during the first Olympic Games.
  16. A more modern version is found in Forme of Cury, an English cookbook from 1390.  
  17. The English name cheesecake has been used only since the 15th century.
  18. But the cheesecake became the dessert we know today in the 18th century.
  19. Modern commercial American cream cheese was developed in 1872.
  20. It happened when William Lawrence, from  New York, was looking for a way to recreate the soft, French cheese Neufchâtel and he accidentally came up with a way of making an “unripened cheese” that is heavier and creamier.
  21. Other dairymen came up with similar creations independently.
