Did you know that ‘kipferl’ is an ancestor of the croissant, which has been first documented in Austria around the 13th century?
Croissant in today’s form is an adaptation from Kipferl and can be dated at latest 1839, when an Austrian artillery officer, August Zang, founded a Viennese bakery in Paris.
The bakery served Viennese specialities including the Kipferl and the Vienna loaf and quickly became popular and inspired French imitators, who renamed the French version of the Kipferl for its crescent (croissant) shape.
